Recipe Review | Lemon Shrimp & Asparagus

I’ve been on the road to finding food recipes that are healthier for my weekday meal preps. I tend to crave a lot of food with bread; like cheeseburgers and donuts, which are my fave, so don’t get me started as this is a really good step for me. Plus let’s face it, in my household my boyfriend is a very picky person, haha! ;-), so it’s difficult to pinpoint one single recipe that would accommodate both our cravings, so I have to do twice the work in the kitchen.

I’ve been dying to try easy recipes that call for shrimp in it. In my search for new recipes I ran across, ‘ONE PAN, Roasted Lemon Butter Garlic Shrimp and Asparagus‘ by Jen from Carlsbad Cravings, and it was exactly what I was looking for and did you note the ‘One Pan’ reference in the title? I’m all in for a 1 pan recipe, helps with the clean up in the kitchen. I followed Jen’s recipe to the T, with the exception of going a little light on the lemon.

I can’t tell you how excited I’ve been for this recipe only because I literally would not make shrimp at home because of how time consuming it can be and to make it for 1 person, it was just not worth it. If you’re in this same situation, you won’t regret making this recipe.

After making it, I literally inhaled the shrimp and asparagus! Well the asparagus was gone first, it was heavenly, so then I decided to use the shrimp in tacos. The Mexican in me always finds a way to incorporate tortillas! Let me just say they were delish and I didn’t feel full after eating them, so kudos to me, for not running out to grab fast food and loving the recipe for the few days it lasted me.

Lemon Butter Shrimp & Asparagus Recipe

I’ve found my new love for shrimp and now I’m keeping this staple recipe in my weekly rotation. Thank you so-so much Jen!!

I’m still on the hunt for more recipes just because I tend to love a rotation in my meals.
